Chicken Corn Soup

Winter is here and so are hot soups. Chicken corn soup is one of the simple and basic soup which is not only easy to make but also healthy and nutritious. There are also instant soup available in the market but they cannot be the alternative of the fresh ones. The recipe is extremely easy and the ingredients are also readily available.

Ingredients

Chicken stock     5 cups

Chicken (shredded)  1 cup

Salt                    2tsp

Corn paste         5tbsp

Egg whites         2  

corn flour           4tbsp

Chinese Salt      1tsp

For Serving

Soya sauce       4tbsp

Chili Sauce      4tbsp

Vinegar           2tbsp

Green chilies    3-4

Recipe:

Boil chicken with a small onion in 8-10 cups of water until chicken is tender and then separate the bones from chicken and boil it more until only 5 cups are left.

Boil corn kernels and coarsely grind them. You can also freeze extra for later use.

Add 5tbsp corn kernels, salt and shredded chicken to chicken stock. Beat egg whites lightly.

Mix corn flour in 1/4 cup of water and pour slowly to the soup while stirring so there are no lumps.

When soup thickens, add egg whites and remove from heat immediately.

Add Chinese salt and serve with soya sauce, chili sauce, vinegar and green chilies.
